Making Baking Pleasurable

 

Full Disclosure, I’m not a great baker, if I'm 100% honest with you it's because I hate following recipes. This banana bread recipe is for those, like me, that love a tasty and nutritious treat.

 

 
 

I cook intuitively, tasting as I go, sometimes listening to supporting ted talks or podcasts, or sometimes it's  more of a creative process for me. I like imagining a taste in my head and then thinking what ingredients will make it taste like that. I usually win on the cooking front, but very rarely when baking.

For me cooking is something that I do a lot more of when I’m stressed. It’s where I can process my thoughts and it becomes something of a meditative release. When I’m working with my clients to help them reduce inflammation, heal gut damage, and reverse auto-immune disease,  cooking, and learning to love to cook, is a big part of this process.  

That is why this Gluten Free Dairy Free Banana Bread is a winner every time.  It is SO resilient (And we all know resilience is the key to a happy life). Last time I substituted one of the cups of almond meal with coconut flour AND dropped it as I took it out of the oven, and still managed to convince everyone in the house to eat it.  

Another reason I love it is because it satiates the sweet tooth. Like my other recipes this only uses natural sweeteners which helps the taste buds change over time to be CRAVING natural sugars instead of those nasty ones which compromise your microbiome. Which in turn affects immunity, brain function, energy, everything really!

I also really love it because my best friend Senka gave it to me, my Nana always made me banana loaf (old school styles) and I gave this recipe to my mum (she uses half carrots, half bananas) so I think of them when I bake.  Which makes me feel good. The more we associate cooking and baking with other people, whether you are baking for someone else or someone has made you something, the higher the level of Vitamin L is in the baking. 

So here you go, here is the world's easiest banana bread recipe which has saved the lives of many of my clients who are trying to INCREASE fats and proteins, DECREASE sugar, and just fill a hole at 3pm.

The world’s easiest banana bread.

 

Ingredients

  • 4 Eggs

  • 3 Ripe Bananas

  • 1/4 cup Honey 

  • 1/4 cup Coconut Milk or Almond Milk 

  • 1 T Vanilla (I just hurl a pile in)

  • 2 1/4 cup Almond Flour

  • 1/2 tsp Sea Salt

  • 1/2 tsp Cinnamon 

  • 2 t Baking Soda

 

Method

  1. Mix wet ingredients in one bowl. (First five ingredients.

  2. In another bowl mix the dry ingredients, then gently combine both bowls. 

  3. Pour into baking dish and bake for 35 - 50min on 180 degrees.

  4. Leave to rest for 10 mins before slicing and enjoy with your favourite pasture-raised butter.
